Whipped Feta Peach Dip

A simple, tasty appetizer for cocktail hour on the porch. The dip and peaches can be made ahead, just let the peaches sit at room temperature a bit before adding to the dip.

Total time: 15 minutes

 

Ingredients:

  • 8 oz. feta, crumbled
  • ¾ cup Greek-style yogurt
  • 2 garlic cloves, chopped
  • 5 Tbsp. olive oil, divided
  • ½ tsp. black pepper
  • Kosher salt
  • 1 medium peach, chopped (about 1 ¼ cups)
  • 1 Tbsp. chopped fresh parsley
  • Crostini, pita chips, or crackers, for serving

 

Instructions:

  1. Place feta, yogurt, garlic, 1 tablespoon of the olive oil, and pepper in a food processor, and process until smooth, stopping to scrape down sides as needed.
  2. Season to taste with salt- it may not need any as the saltiness of feta will vary. Transfer dip to a bowl, cover, and refrigerate until ready to serve.
  3. Place 4 tablespoons olive oil, chopped peach, a pinch of salt, and a pinch of pepper in a small saucepan over medium. Bring to a simmer; cover, reduce heat to low, and cook until peaches are very soft, about 10 minutes. Remove from heat, and let cool slightly, or cover and refrigerate until ready to serve.
  4. Top feta dip with peaches and any juices. Garnish with parsley.

 

Tip: Chill the whipped feta for at least 30 minutes before serving. The flavors meld together and the dip becomes thicker and creamier, creating the perfect contrast to the warm peach topping!
