Mint Hibiscus Peach Shrub

This vibrant peach shrub is layered with refreshing summer flavors. Bright, floral hibiscus adds a natural tartness that enhances the sweetness of ripe peaches, while mountain mint brings a cooling herbal note with hints of gentle menthol. The aroma opens with fresh mint and juicy peach, followed by the fruity tang of hibiscus and a smooth, lingering mint finish. Each sip offers a balance of sweet, tart, and herbal flavors, creating a refreshing and complex drink that's especially welcome on hot summer days! 

 

Makes: 14 fl. oz.

Ready in: 15 minutes

 

Ingredients:

  • 3 peaches
  • 50 grams water
  • 50 grams white balsamic vinegar
  • 5 grams sugar
  • 8 sprigs of mountain mint
  • 15 grams dried hibiscus 

 

Instructions:

  1. Half, pit, and dice the peaches. 
  2. Combine diced peaches, hibiscus, mountain mint, and sugar in a mason jar for 30 minutes, or until the sugar begins to dissolve in the peach juice. 
  3. Add warm water and vinegar.
  4. Allow to infuse in the refrigerator for at least two days, but up to seven days.
  5. Once infused, strain through a fine sieve into your beverage of choice.

 

Tip: This shrub can be stored in the refrigerator for up to six months! For a non-alcoholic drink, add this shrub to one cup of soda water. If you prefer more of a kick, add 1.5 oz of scotch to your shrub with the aforementioned soda water!
