Maple Peach Smoothie Bowl

Makes: 4 Bowls
Ready in: 35 minutes
Ingredients:
Smoothie:
- 6 peaches, frozen and sliced
- 2 bananas, frozen and sliced
- 1 scoop of plant protein powder
- 2 tablespoons flax seeds
- ¾ cup coconut milk
Granola:
- 2 cups rolled oats
- 2 teaspoons ground cinnamon
- ½ tablespoon sea salt
- ¼ cup coconut oil, melted
- ¼ cup maple syrup
- ½ cup fresh pecans
Instructions:
- Preheat your oven to 350°F. In a medium bowl, combine all of your granola ingredients, except for the pecans. Once well-mixed, fold in pecans.
- Spread in an even layer onto a baking sheet. Cook for 15-20 minutes, or until golden brown. Allow to cool for 10 minutes.
- While the granola is cooling, add all of your smoothie ingredients into a blender. Blend until smooth, adding more coconut milk if needed.
- Pour your smoothie mix into a bowl, and top with granola. Enjoy!
Tip: The protein powder helps make this smoothie thick, but can be omitted if needed!
