Maple Peach Smoothie Bowl

 

Peach Smoothie Bowl with Maple Pecan Granola

Makes: 4 Bowls

Ready in: 35 minutes

 

Ingredients:

Smoothie:

  • 6 peaches, frozen and sliced
  • 2 bananas, frozen and sliced
  • 1 scoop of plant protein powder
  • 2 tablespoons flax seeds
  • ¾ cup coconut milk

Granola:

  • 2 cups rolled oats
  • 2 teaspoons ground cinnamon
  • ½ tablespoon sea salt
  • ¼ cup coconut oil, melted
  • ¼ cup maple syrup
  • ½ cup fresh pecans

 

Instructions:

  1. Preheat your oven to 350°F. In a medium bowl, combine all of your granola ingredients, except for the pecans. Once well-mixed, fold in pecans.
  2. Spread in an even layer onto a baking sheet. Cook for 15-20 minutes, or until golden brown. Allow to cool for 10 minutes.
  3. While the granola is cooling, add all of your smoothie ingredients into a blender. Blend until smooth, adding more coconut milk if needed.
  4. Pour your smoothie mix into a bowl, and top with granola. Enjoy!

 

Tip: The protein powder helps make this smoothie thick, but can be omitted if needed!
