Peach Smoothie Bowl with Maple Pecan Granola

This is a fantastic recipe provide by our friends at A Happy Healthy Heart!

Smoothie
6 peaches, sliced and frozen
2 bananas, sliced and frozen
1 scoop plant protein powder
2 tbsp flax seeds
¾ cup coconut milk

In a blender combine all ingredients until smooth and creamy, adding more coconut milk if needed. Once smooth, pour into bowl and top with granola.

  • The protein powder helps to make the smoothie thick, but can be eliminated if needed.

Granola
2 cups rolled oats
2 tsp cinnamon
½ tbsp. sea salt
¼ cup coconut oil, melted
¼ cup maple syrup
½ cup fresh pecans

Preheat oven to 350 degrees F. In a medium bowl, combine all ingredients except pecans. Once well mixed, fold in pecans. Spread in an even layer onto a baking sheet. Cook for 15-20 minutes or until golden brown. Allow to cool for 10 minutes. Sprinkle over smoothie and enjoy!
