Slow-Cooker Peach Butter
Flavored with warm spices, the flavor of this peach butter is reminiscent of apple butter- but with peaches, dare we say, it’s even better?
Makes: About 4 cups
Prep time: 10 minutes
Total time: 3 hours, 10 minutes
Ingredients:
- 2 ½ lb. peaches (about 6 medium)
- 1 ¼ cups granulated sugar
- 2 Tbsp. fresh lemon juice
- 1 tsp. ground cinnamon
- ¼ tsp. ground allspice
- ¼ tsp. ground nutmeg
- A pinch of kosher salt
Instructions:
- Coarsely chop peaches and place in a slow cooker with the sugar and remaining ingredients. Stir. Cover and cook on HIGH 3 hours.
- Blend peach mixture, removing the center piece of blender lid and covering with a kitchen towel so that steam may escape while blending.
- Let cool, then place in jars and refrigerate up to 1 month.
Tip: For the richest flavor, use fully ripe peaches that yield slightly when pressed! Overripe peaches may work especially well because their natural sweetness intensifies during the slow cooking process, creating a deeper, more concentrated peach butter with less tartness.
