Ingredients:
- 2 tablespoons olive oil
- 1 small shallot, finely chopped (or 1/4 small onion)
- 2 medium peaches, chopped (about 2 cups)
- 2 tablespoons vinegar (whatever you have on hand)
- 1 tablespoons honey (or agave/any honey replacement)
- Kosher salt, to taste

- ⅛ teaspoon crushed red pepper, optional
- 1-2 teaspoons chopped fresh herbs (thyme & rosemary, mint & parsley, or cilantro & basil)
Instructions:
- Heat olive oil in a medium-sized skillet, over medium heat. Add shallot and cook, stirring occasionally, until beginning to soften, about 2 minutes.
- Add peaches, vinegar, honey, fennel seeds, salt to taste - and, if desired, crushed red pepper.
- Cook over medium. Stir often and lightly mash peaches with a spoon, until peaches begin to break down and thicken, about 5 minutes.
- Remove from heat, and stir in herbs. Serve over chosen protein, bread, or with chips.
