When you have peaches that are over-ripe, why not turn them into a jam that can be enjoyed for weeks?
What You'll Need1 1/4 lb. very ripe peaches, quartered (about 3 medium peaches)
1 cup granulated sugar
3 Tbsp. fresh lemon juice
1. Place peaches, sugar, and lemon juice in a heavy-bottomed, non-reactive pot; mash with a potato masher.
2. Bring to a boil over medium-high, stirring often.
3. Cook 10 minutes, stirring often, until thickened and jammy. To test if the jam is done, spoon a small amount on a small plate, and freeze 1 minute. After 1 minute, tilt the plate. If the jam runs off quickly and easily, it's not quite done.
4. Cool to room temperature, then spoon into jars, cover, and refrigerate up to 1 month.
