What You'll Need2 oz. Aperol
1/2 oz. Peach Simple Syrup (recipe follows)
1-2 oz. chilled club soda, to taste
3 oz. chilled prosecco
1-2 fresh peach slices
Pour all ingredients in a wine glass filled with ice; stir to combine
Peach Simple Syrup

What You'll Need2 medium peaches, pitted and cut into wedges
2 Tbsp. fresh lemon juice
1 1/2 cups granulated sugar
1/2 cup boiling water
- Place the peaches in a medium microwave-safe glass bowl. Pour the lemon juice and sugar on top (do not stir) and cover very tightly with plastic wrap, wrapping it all the way around the bowl to seal in the steam while cooking. Microwave on high 5 minutes.
- Carefully remove the plastic wrap so as not to burn yourself on the hot steam. Stir well. Cover and repeat the process until all the sugar has been dissolved.
- Strain the syrup through a fine-mesh strainer into a medium bowl to remove the solids. You can save the peaches to use as a jam. Whisk in the boiling water and transfer the syrup to a jar. Allow to completely cool. Cover and refrigerate until needed, up to 1 month.
