Arugula, Blackberry, and Peach Salad

The dressing can be made ahead and stored in an airtight container in the fridge for up to 3 days. Let it warm up a bit at room temperature before using.

What You'll Need

3 Tbsp. apple cider vinegar

1 Tbsp. minced shallot

1 Tbsp. chopped fresh chives

1 tsp. Dijon mustard

1 tsp. honey

1/2 tsp. kosher salt

1/2 tsp. black pepper

1/3 cup olive oil

5 oz. arugula

1 peach, sliced (about 1 1/2 cups)

1 cup fresh blackberries

2 oz. goat cheese, crumbled

1/2 cup honey-glazed almonds, chopped

1. Whisk together vinegar, shallot, chives, mustard, honey, salt, and pepper in a large bowl. Gradually whisk in olive oil until combined.

2. Add arugula, peach, blackberries, goat cheese, and almonds, tossing to coat. Serve immediately.
