Fall Salad with Apples, Blue Cheese, and Salted Pecans

Fall salad with apples and pecans.

Make dinner prep easy by making this dressing ahead of time. It will keep 2-3 days if refrigerated.

½ tsp. Dijon mustard
½ tsp. honey
1 ½ tsp. minced shallot
¼ tsp. kosher salt
¼ tsp. black pepper
1 Tbsp. fresh lemon juice
1 Tbsp. white balsamic vinegar
¼ cup extra virgin olive oil
1 (5 oz.) container mixed greens
1 large apple, chopped
2 oz. blue cheese, crumbled
½ cup The Peach Truck Roasted and Salted pecans, coarsely chopped

To make the dressing, whisk together the mustard, honey, shallot, salt, pepper, lemon juice, and vinegar in a large bowl. Slowly whisk in the olive oil.

When ready to enjoy, add the mixed greens, apples, blue cheese, and pecans.  Toss to coat.
