Chicken Sausages with Roasted Fennel, Onion, and Apples

Chicken Sausage with Apples

Yields: 3-4 servings

4 Tbsp. olive oil
2 Tbsp. apple cider vinegar
1 Tbsp. whole grain mustard
½ tsp. kosher salt
½ tsp. black pepper
1 fennel bulb, thinly sliced
1 medium red onion, sliced
2 medium Honeycrisp apples, sliced
2 rosemary sprigs
1 lb. uncooked chicken sausage links

1. Preheat oven to 375F.

2. Whisk together olive oil, vinegar, mustard, salt, and pepper in a small bowl.

3. Toss together fennel, onion, apples, rosemary, and olive oil mixture on a large rimmed baking sheet and arrange in an even layer. Place sausages on top of apple mixture.

4. Bake 40 minutes or until sausages are cooked through and vegetables are tender.
