¾ cup unsalted butter
1 cup packed light brown sugar, divided
1 ½ tsp. apple pie spice, divided
1 Tbsp., plus ½ cup all-purpose or gluten-free flour, divided
2 tsp. vanilla extract, divided
2 lb. apples
2/3 cup old-fashioned rolled oats
1. Preheat oven to 375F.
2. Melt butter in a small saucepan over medium heat, stirring occasionally. Continue to cook, stirring often, until foaming subsides, brown bits form on the bottom of the pan, and the butter has a nutty aroma. Remove from heat, and pour butter and any browned bits (scraping the bottom of the pan with a spatula if needed) into a small bowl.
3. Whisk together ¼ cup of the brown sugar, 1 teaspoon of the apple pie spice, 1 tablespoon of the flour, 1 teaspoon of the vanilla, and 4 Tablespoons of the browned butter in a large bowl.
4. Chop apples, and add to the butter mixture in the bowl, tossing well. Spoon mixture into a buttered 1 ½ quart baking dish or 9-inch ovenproof skillet.
5. Stir together the remaining ¾ cup sugar, ½ teaspoon apple pie spice, ½ cup flour, 1 teaspoon vanilla, oats, a big pinch or two of kosher salt, and remaining browned butter in a medium bowl until combined. Sprinkle over the apples.
6. Bake 45 minutes or until golden brown and bubbly. Let cool at least 10 minutes
before serving.
