Fresh, bright flavors are what summertime is all about. This simple salad showcases those perfectly and can be whipped up in just a matter of minutes. While many salad dressings use olive oil, we’ve opted for a lighter-flavored salad oil so the flavors of ripe, juicy peach and creamy avocado can shine through.
1 head bibb lettuce
⅔ cup salad oil (canola, walnut, or other lightly-flavored oils are ideal)
2 T granulated sugar
¼ cup apple cider vinegar
1 teaspoon sea salt
2 teaspoons poppy seeds
Begin preparing your salad components by washing the lettuce and patting it dry. Wash, pit and slice the peaches into wedges. Pit, peel and slice the avocado. Arrange ingredients on plates and set aside while you make the dressing.
For the dressing, start by adding the oil to a small mixing bowl. Add in the sugar and, using a wire whisk, slowly add the vinegar while mixing vigorously. The dressing will quickly become creamy. Add in the salt and poppy seeds and mix to combine. Serve immediately.
