1/3 cup extra virgin olive oil
Salt and pepper, to taste
1 large apple, thinly sliced
5 oz. baby arugula
2 oz. Parmigiano Reggiano cheese, shaved
Whisk together the lemon juice, olive oil, salt, and pepper in a large bowl. Add apples and arugula, tossing to coat. Top with shaved Parmesan.
