Peach & Pecan Granola
Why not make your own granola? It’s easy to do and you can control the ingredients. This recipe is easily adapted, adding more fruits or nuts as you desire.
4 rolled oats (not quick-cooking oats)
2 cups unsweetened shredded coconut
1 cup chopped pecans
½ cup honey or sorghum
1/3 cup melted butter
1 tsp ground cinnamon
½ tsp sea salt
Preheat oven to 350 degrees. In a large mixing bowl, add oats, coconut and pecans. Whisk honey and butter together in a smaller separate bowl to combine. Blend in cinnamon and salt to the honey butter mixture and drizzle over oat mixture. Toss to mix, coating all the oat mixture with the honey and butter.
Spread mixture evenly over a large sheet pan and bake in the center rack for 10 minutes. Remove and redistribute the granola, as the corners will have a tendency to cook first. Return to oven and check after 10 minutes. Continue the process until granola reaches a deep brown color. Let cool to room temperature before packaging in air-tight containers.
When ready to serve, add chopped dried peaches.
