Peach Fruit Leather
Why buy the expensive stuff from the store when you can make your own fresh peach fruit leather? By making it yourself you can adjust the sweetness and even substitute sugar with honey or agave syrup. Once made, the fruit leather will keep in an air-tight container for a couple weeks….though, we doubt it will sit around that long!
3 cups pitted, peeled and sliced peaches
juice of one lemon
1/3 cup sugar (or honey or agave syrup)
Preheat oven to 150-200 degrees (the lowest setting it will go).
In a blender or food processor, add peaches and lemon juice and puree until smooth. Taste for sweetness and add sugar or other sweetener. Feel free to adjust the amount of sweetener based on your personal preference. Blend to combine sweetener.
Prepare a half sheet pan with a silicone baking liner. Pour peach puree on the pan and spread evenly over the pan. Place in the center rack of the oven and bake for 6-8 hours until the mixture is set and no longer tacky to the touch.
Remove from oven and let cool to room temperature before using a pizza cutter to cut the fruit leather into strips. Peel away from the silicone sheet and store in an air-tight container with wax paper or parchment paper between layers.
