Habanero Peach Hot Sauce
Makes approximately 4 cups
The sweet juicy peach is a perfect balance to the sharp and spicy flavors of the habanero pepper. While this sauce is quite spicy already, you can adjust the heat level by reducing or increasing the number of habanero chilies used. Using Peach Truck peaches at the main ‘vehicle’ for heat in this sauce provides a deliciously-sweet heat that’s fantastic on everything from fish tacos to pulled pork BBQ.
6-7 fresh peaches, pitted, peeled and roughly chopped
4 fresh habanero chilies
1 cup light brown sugar
1 ½ cups white vinegar, divided
2 tsp sea salt
pinch freshly-grated nutmeg
Begin by removing the stem and seeds from the habanero chilies. It’s best to do this with protective gloves and be certain to immediately wash the cutting board and utensils afterwards.
In a skillet over medium heat, add chopped peeled peaches, habanero chilies, brown sugar and one cup of vinegar and bring to a simmer. Allow mixture to cool slightly before transferring to a blender and blending until very smooth. Pour contents into a saucepan, add salt and nutmeg and bring to a boil. Add remaining ½ cup of vinegar, bring to a boil and skim off any foam that rises to the top. Carefully transfer hot mixture to clean jars and store, refrigerated, for up to 6 months.
